Just popping in real quick as I eat my awesome lunch and have discovered something SO tasty, it must be shared. Want a good lunch? Try marinading some random veggies with Italian dressing for a night-then scoop them on your plate. Next, go to Sobey’s for their freshly made Chicken Cordon Bleu’s-heat them up…and finally, pan fry some freshly cut mushrooms in butter. Once they are ready to go-add them to your Cordon Bleu with your veggies as a side.When you cut IN to your chicken, the cheese will oooooooze out therefore, mixing together with the sliced mushrooms and you NOW have mushroom cheese sauce! Is THAT not cool and wild all at the same time?? haha.

Too bad I ate most of my dish to post a picture..sigh…but stay tuned as my famous Enchiladas will be coming to this blog-picture, recipe and ALL the good stuff….

I found this picture tonight in an old shoebox along with TONS of other baby pics…I always loved this picture as it was taken just off the road by my house-it was summer and the fields were full of canola flowers. I remember my Dad stopping me there so I could take pictures picking the flowers-the smell was so sweet and the air was so warm. Those were truely the best times to be a kid living out in the country….what a wonderful time that was.

In light of my 27th birthday…I had a flashback to my 6th birthday…and this is what it looked like….

Wasn’t I cute? And that shirt I am wearing was lined with pink sequins-an absolute favorite shirt of mine for many years.

Ahhh-hours before Cupid wakes up and fills his bag full of arrows that are coated in the LOVE DRUG, I am posting about a random act of kindness that I had today! I went to work and did my usual thing-my last batch of students came and all was well. The last two that I teach are good kids-have had them for a handful of years now. It was that time of year-the bad voices singing the chant and taunt of HAPPY BIRTHDAY TO YOU..with the blaring candles on a cake that could easily set the house on fire and the constant reminders of your youth that hey, you aren’t young anymore…I faced my birthday-TWICE.

Up until the weeks leading to my birthday, my annual birthday buddy, Michelle and I decided to do it again-brave our age together-and have a double party. We had a really hard time trying to come up with a cool place to have our party. We didn’t want to just solely do a restaurant and go home (although I wouldn’t have minded since my head and heart weren’t in to the whole sh-bang since my pooch passed away)..then we thought of going bowling somewhere but I knew that I would throw my back and neck out dealing with a 5 pound ball….then we had trouble with the location-where could we go that had fun and games but was central to both our areas?

After dealing with that for a few weeks…we had nothing but the idea of a sportsbar in town that we went to last year…no other choice so we made THAT one our own! (more…)
